Healthy recipe: Coconut Mango Bars
1 cup raw cashews
½ cup raw whole almonds
1 cup pitted dates
1 cup chopped dried apricots
½ cup chopped dried mango
½ cup unsweetened shredded coconut
Instructions: In a food processor, blend all ingredients for 2 to 3 minutes, until well combined and sticky. On a baking sheet, shape the mixture into a rectangle, 8 ½ x 4 x ¾ inches and refrigerate, covered, for at least 1 hour. Cut into 12 bars. The bars will keep in the refrigerator, wrapped in wax paper in a sealed plastic bag or airtight container, for about 3 months.
Makes 12 servings
