I’m looking to enter a pie contest next month and am in research mode. I have a pie crust that I think does well with any kind of fruit pie (and I’m hoping to make a fruit pie) in that the bottom bakes well and gets its buttery layers like the top (some recipes I tested end up with a odd cakey bottom layer). It is an all butter crust with a tiny bit of apple cider vinegar.
Still, I want to test a few more recipes. I also am looking for some flavor and fruit ideas. The best pie I ever had in my life was a cherry, kumquat, & quince pie. One of the pies that won 2 years ago was a peach & ollalieberry pie. I’m in California so I have good access to a lot of fruits. I’m currently considering a peach & black mulberry pie.
