Zucchini wrapped Black Cod With a ginger/garlic/lime soy sauce marinade over cilantro lime rice with cherry tomatoes

Every now and again I create a new dish that surprises me with how awesome it is! Does this happen to anyone else? Anyway, here is my recipe!!

Ingredients 1/2 pound Sablefish aka Black Cod 1 small Zucchini 1/2 cup White rice (I used Minute rice) 2 tablespoons chopped Cilantro 1 Lime 2 tablespoons Soy sauce 1 tablespoon Olive oil 1 teaspoon Honey 1 clove of grated Garlic 1 teaspoon grated Ginger Handful of cherry tomatoes Kosher salt Fresh cracked pepper

Directions 1. Mix together soy sauce, olive oil, honey, grated ginger, grated garlic, and juice of half of the lime. 2. Place fish in marinade for 30 minutes 3. Use mandoline or slice zucchini thinly length wise, sprinkle with kosher salt and cracked pepper to taste. 4. Lay out zucchini, slightly overlapping one another. 5. Place fish on top of zucchini and gently roll the fish to wrap it. 6. Put fish in an oven safe dish (if you want, drizzle some of the leftover marinade over the wrapped fish) and cook for 20 minutes at 350 in the oven. 7. Cook 1/2 cup of minute rice per box directions. 8. Once rice is done, mix in the juice of the other lime half and add the chopped cilantro, add salt and pepper to taste. 9. Scoop rice onto plate, and place zucchini wrapped cod on top. 10. Slice cherry tomatoes in half and toss on top of fish (I added this because I had them on hand and it added a pop of color! It’s easy to leave off if you don’t want it) 11. Enjoy!!
