(Ingredient advice) How could I add apples to my crockpot pork loin without them going to mush?

I make a simple pork loin recipe salt, paprika, red pepper, garlic powder, chili powder, and cinnamon are the basic spices i use on it, then I throw it in the cooker with some broth. Towards the end I normally toss in some peppers, broccoli, cauliflower, potatoes, and carrots.

This time I wanted to do something different and add apples to it but I don't want them to become complete mush in the crockpot and I'm not really sure what type of apples I should use.

I've made a sweeter loin before with orange juice and pineapple for thanksgiving but wasn't really into the meat itself being sweet and want to use the apples to add a new flavor to the loin I normally make.
