I used to live in San Antonio, where you would get early on a Sunday morning and just go and buy barbacoa from your favorite molino. Now i live in a small town, where the only place to buy some is from Mexican restaurants. The problem is that instead of using beef cheeks, they use chuck roast. I know that its simple (beef cheeks, salt, pepper), possibly boiled.braised or steamed. But the recipes i have found online have beef cheeks braised in chilies, and that is NOT what i am looking for. I would like to surprise my family by making some for Christmas, so any help would be greatly appreciated.
