Lowfat Slim Jim Alternative (Vegetarian)

We are aware that Slim Jims are high in fat. However, there are ways to capture the flavor without the fat. This recipe is also suitable for vegetarians since it has no meat by products. You can use the dry portion of this recipe to extend ground meat to save money.

Serves 12

3/4 cup vital wheat gluten flour
1/4 soy or other bean flour
1 TSP adobo or lawry
1 TSP old bay
1 TSP black pepper
1 TSP italian seasoning
1 TBSP garlic powder
1 TSP celery seeds
salt

1/2 cup spaghetti sauce
3/4 cup water
1 dash franks red hot
1 tsp vegetable oil

Mix the dry part together, then mix the liquids (not oil) together then mix the wet into the dry, with a spoon. Mix until its incorporated. Do not knead it, or bits of pepper will come out. Grease the outside with 1 tsp vegetable oil.

Press it into the bottom of a small rectangular pan and put tin foil over it. If you have no pan, make it flat, rectangular and put it in a tin foil packet like fish. Bake it until the middle is firm, not squishy.

Usually 350 in a regular oven or 400 in toaster ovens, for 1 hour. You can save energy by making slim jims and bread at the same time.

bon appetit
