Skillet Pumpkin Blondie Recipe - In Honer of National Blondie Day (1/22)

Blondies, everyone loves them! Maybe it is how they taste so good while looking completely different than "they should". Maybe it is the way that the brown sugar makes the chocolate chips taste (wonderful). Whatever it is, they are simply great. This is no Duncan Hines recipe, this recipe you make from scratch, and it will blow you away. Recipe can be found here

Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 2 teaspoons pumpkin pie spice
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon sea salt
  • 1 stick of unsalted butter, melted (1/2 cup)
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate chips

Directions

  • Preheat the oven to 350 degrees F.
  • In a large mixing bowl, combine the flour, both sugars, pumpkin pie spice, baking powder, and salt. Mix well. Then whisk in the melted butter, pumpkin puree, egg, and vanilla. Whisk until smooth.
  • Stir the white chocolate chips into the batter. Then scoop the batter into a 9.5 inch Swiss Diamond Fry Pan and smooth out the top. Bake for 25-30 minutes. Check by inserting a toothpick into the center of the blondies. If it comes out clean, remove from the oven.
  • Cool for 5 minutes. Shake the skillet gently to loosen the edges and slide the entire skillet pumpkin blondie recipe out of the fry pan. Cut and serve with ice cream!
