I made some delicious pumpkin gnocchi for dinner last night, and would love to be able to make it again and bring to a potluck lunch at work.
I would need to make the gnocchi the night before. I would not have access to a stove to freshly boil the gnocchi day of. I would have access to a microwave. Some options I have thought of:
- Boil gnocchi night before, refrigerate, and bring to work in a crock pot set on "warm." Let gnocchi warm up slowly over the course of 4 hours, microwave the sauce, and then stir together to serve
- Boil gnocchi the night before, refrigerate. Microwave in batches, then mix with sauce and place in a warm slow cooker so it stays warm throughout the potluck lunch.
Is this doable? Will I just end up with a gluey, gross mess if the gnocchi is warming for so long? I am not completely sold on making this- I do have a backup plan of cookies- but the gnocchi was sooo good last night that I really want to make them again :)
