Creamy Lemon Herb Garlic Naan Pizza

Serves 2

Ingredients

2 Garlic Naan

1/4 Cup Ricotta Cheese

1/4 Cup Goat Cheese

1 Cup Italian 5 Cheese Blend

14 Cherry Tomatoes or Grape Tomatoes Halved

1/2 Cup Crispy Cubed or Torn Prosciutto or Bacon

1/3 Cup Portobello Mushroom Cubed

1/4 Cup Spinach Chopped

1/4 Cup Fresh Basil Chiffonade

1/2 Small Lemon Zested

1-2 Tbsps Balsamic Vinegar

1 Tbsp Extra Virgin Olive Oil

1/2 Tsp Lemon Juice

1 Tsp Fresh Chives Minced

1/4 Tsp Dried Thyme, Rosemary, and Oregano

1/2 Tsp Salt

1/4 Tsp Black or White Pepper

Preparation

1. Zest half a small lemon into a bowl with the olive oil and add half a teaspoon of the juice then allow your dried herbs to rehydrate in it for five minutes.

2. Add your ricotta goat cheese, chives, salt and pepper to your lemon herb oil and combine the mixture well.

3. Smear each naan, flat side down, with half of the cheese mixture and top with half of the shredded cheese, chopped spinach, halved tomatoes, mushrooms, and prosciutto.

4. Bake on the middle rack of your oven at 400 Degrees for 10-11 minutes, broil on high for an additional minute or so if extra browning is needed.

5. Remove from the oven and sprinkle with the chiffonade of basil and swirl a drizzle of balsamic vinegar over the top.
