Ingredients
- 4 chicken breasts/8 chicken thighs
- 2 Jalapeno peppers
- 1 pkg cream cheese
- 1 1/2 cups shredded cheddar cheese
- 1 pkg ranch dressing powdered mix (ranch seasoning etc etc)
- 4 slices of bacon crumbled (or diced and then cooked)
Directions
Bring cream cheese to room temp (it's easier to mix that way and better not to put something cold inside chicken and cook). Preheat oven to 400F.
If using boneless skinless chicken thighs, nothing needs to be done with the chicken to prep. If using breast, filet them so that you can stuff them.
Remove seeds and ribs from jalapeno and dice. Combine jalapeno, bacon crumbles, ranch mix, cream cheese and cheddar cheese. I usually mix by hand or with a big spoon. Separate cheese mixture into 4/8 equal amounts. Stuff inside chicken and fold chicken in half. I usually just place it open side down in the pan, but sometimes I use skewers to hold in place.
Place chicken in greased baking pan. Cook for 30 min. or until chicken juices run clear.
