Maybe not the right sub, but adapting from loving to cook for a family of 5 to cooking for a family of one (we’ll, 4, half the time, but on working dad schedule)?

Recipes are, indeed, scalable, but the results in my experience are not always equal. I can still attack my epic recipes on the weekends, but grow tired of leftovers. What resources are out there for guys like me? Any there any books/sites that are culinarily-rewarding, yet can be prepped in advance or cooked quickly for when I have the kids?
