Pumpkin Whoopie Pies w/ Cinnamon Cream Cheese Icing

Wet Ingredients

  1. 1 15oz Can of Pumpkin
  2. 1/2 C Shortening
  3. 4 Tbsp Unsalted Butter
  4. 1 1/2 C Brown Sugar
  5. 2 Eggs
  6. 2 tsp Vanilla

Dry Ingredients

  1. 3 C Flour
  2. 1 tsp Baking Soda
  3. 1 tsp Baking Powder
  4. 1/4 tsp Cloves
  5. 1/4 tsp Allspice
  6. 1 tsp Cinnamon

Cinnamon Cream Cheese Icing

  1. 8 oz Cream Cheese
  2. 8 oz Unsalted Butter
  3. 2 tsp Vanilla
  4. 2 1/2 C Powdered Sugar
  5. 2 tsp Cinnamon

Instructions

  1. Preheat oven to 400°
  2. Set out Cream cheese and butter to soften for icing
  3. In a small bowl combine all dry ingredients and mix with a whisk
  4. In a large bowl cream together wet ingredients using a mixer
  5. Add dry ingredients to wet ingredients in 1/2 increments
  6. Once all ingredients are combined scoop batter, using a 1 inch cookie scoop, onto parchment lined cookie sheets
  7. Bake for 8 to 10 minutes
  8. While cake is baking make icing
  9. Cream together butter, vanilla and cream cheese
  10. Add powdered sugar one cup at a time
  11. Add cinnamon last
  12. Ice whoopie pies once they have completely cooled
