I love a nice runny yolk in my eggs. So I devised a way to cook an omelette with the yolks intact. I have a small amount of oil in the pan. I heat the pan and the oil to smoking. I crack a couple eggs directly in the pan and the first side cooks fast. Then I flip and once the second side firms up I turn the heat down to cook the whites through. I put some cheese on top and flip one half of it over on top. The result is an omelette with a runny center and firm exterior. Getting that French omelette taste with the yolks intact.
My question is. Is there a specific name for cooking eggs like this or would it just be an over easy fried egg flipped on itself with cheese?
