Pão de queijo

2 cups Tapioca Starch

1 tsp salt

1/2 cup canola oil

1/3 cup water

1/3 cup milk

2 eggs

6 oz shredded parmsean

Combine starch and salt in a mixing bowl.

Bring oil, water and milk to a simmer(medium heat) until white foam starts to appear.

Add to starch and hand combine but use caution due to heated liquid. You can use a spatula until it cools enough for you to use your hands.

Preheat oven to 375 farenheit and let rest for 15 minutes.

Add eggs and cheese and hand mix again.

Form into 2 inch sized balls and placed on nonstick or greased cookie sheet(not cooking spray it alters flavor).

Bake until golden brown on top, about 20-25 minutes. Make sure you watch them.

Serve with catupiry or cream cheese.
