What cut of beef should I have for a carving station style roast beef for a party?

My wife and I are having a party, casual with an expected 100 guests, some elderly and children, and I would like to have a carving station style roast beef,

In my research I have seen people recommend a steamship round for a true carving station style presentation, but I think it is just too much meat for the event. Every other recipe I encounter recommends a different cut of meat, I have seen eye of round, rump roast, etc.

A prime rib roast gets into thick slices that require people to eat with knives and forks - I am looking for delicate thin slices where people could make sandwiches or just eat it on its own. What are your thoughts and suggestions?
