Apple Cider Glazed Turkey Meatballs

These ended up coming out amazing, and my husband could not stop eating them. Be warned, they will not last long in your house!

For the meatballs

  • 1 lb lean ground turkey
  • 1/4 cup oats, pulsed into a flour
  • 1 egg
  • 1 tsp dried thyme Coupons
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Pinch of salt and pepper

For the apple cider glaze

  • 1 cup apple cider
  • 1/4 cup low-sodium soy sauce
  • 3 tablespoons brown sugar
  • 1 1/2 tsp corn starch
  • 1 tsp ground ginger
  • Pinch red pepper flakes (optional)

Instructions

  1. Preheat oven to 350F
  2. Combine meatball ingredients in a large mixing bowl.
  3. Form into 16 meatballs
  4. Place meatballs on a large baking sheet and bake for 15 minutes.
  5. Give a stir to the meatballs then cook another 5 minutes, or until cooked through.
  6. Meanwhile, whisk glaze ingredients together in a small bowl and pour into a skillet over medium high heat.
  7. Bring glaze to a boil then simmer 3-5 minutes, or until sauce begins to thicken.
  8. Add meatballs to skillet and carefully stir until each meatball is coated in glaze.
  9. Serve meatballs with remaining glaze drizzled on top.

Notes

Nutrition per serving (1 serving = 4 meatballs): 350 calories, 11 g fat, 3 g saturated fat, 34 g carbohydrate, 28 g protein
