Chinese Stye Chick Wings - Much better than buffalo wings

Ingredient

 

A package of chicken wings (10~12)  

Some spring onions  

One gem lettuce  

Salt  

Olive oil  

Sugar (white normal sugar)  

Dark soy sauce ( you can get dark soy sauce in any Chinses supermarket, normally there are two versions, light and dark soy sauce. If you want wings to have a darker color, grab the dark one )

 

Steps  

1.Fry wings and keep turning them to make sure they are fried on both sides until they are 70% cooked.  

2.Add two teaspoons of salt. Try to distribute salt as even as possible to all the wings.  

3.Add two tablespoons of dark soy sauce and then turn the wings to the other side, add another two tablespoons of dark soy sauce. This is to make sure wings are colored evenly on both sides.  

4.Add two and half tablespoons of sugar and then add some water, just enough water to dissolve all the sugar. Move wings around in the pan to make sure all of them get some seasoning. Put the lid on, leave the fire to lower setting to let it cook for 2~3 minutes.  

5.Open the lid and let the water evaporate. Once the sauce gets thicker, turn the wings to make sure both sides of the wings grab some sauce.  

6.Ready to serve! I normally serve them with some lettuce at the bottom and some chopped spring onions on top just to add some crunchy goodness. Enjoy
