[Question] Looking for help for someone with bad attention and extremely low energy who is trying to eat better.

I tried posting on /r/food and didn't get much so I was hoping you guys might also be able to help.

I'm trying to get a bit healthier and cook some things but it's so overwhelming. It seems like every time I look for recipes they're all so overwhelming, even the supposed "easy" recipes people post.

I have attention problems and almost no energy most of the time and trying to get all the random stuff recipes call for and then going through all the steps is just discouraging. I can do it fine when the stars align, but most of the time I don't have the wherewithal to be able to do that. I end up just being able to maybe make a basic hamburger or a fried egg and that's about all I can manage sometimes. Sometimes I might forget about a part and just find something in the oven the next day or missing something important, but more often I just don't cook anything. At worst it's a box of some snack and that's what I'll eat for dinner.

Eating lunch at work I was doing some of the healthier end of frozen meals but I've gotten so sick of it and depressed of what they are and look like. It's gotten to the point that I have started just skipping lunch some days because I don't have the energy to prepare anything before hand or even walk out the the cafeteria building.

At one point I subscribed to a Blue Apron type thing and that was okay for a bit but the energy commitment still was too much and I ended getting backlogged and not making it after a while. It was extremely helpful to have the ingredients and recipes already figured out, but still the prep and cook time was hard to handle. I know I need to eat better and more and that should help with some energy issues but I'm in such a low place lately I can't even manage much. What kind of things can I do to eat a reasonable meal and be able to make things for lunch at work, etc? It doesn't need to be recipes, but maybe basic things I could eat and still remain healthier without having to go through a half hour prep and more for cook time type things with 20 ingredients.

As an example of what I can occasionally do is a simple breakfast burrito. So just scrambled eggs with hot sauce and some sausage cut up and thrown in a tortilla. Even that I am not goo about getting around to doing. It's a bit bland I guess but if it starts getting more complex I'll just never do it at all.

Also as a help I have a reasonably well tooled kitchen (if no pantry or food stock to speak of) and a slow cooker etc but it mostly just doesn't get used. Even the slow cooker recipes I see overwhelm me :/

TL;DR: I have no energy for much cooking. What are some extremely simple things I can prepare/eat and remain somewhat healthy without getting extremely depressed?
