Savory Tomato Bisque - This soup is absolutely delicious and easy to make!

Tomato Bisque

2 cups of fresh tomatoes, chopped fine
2 stalks of finely chopped celery
1/4 cup finely chopped onion
1/4 to 1/2 tsp. basil (I like to rub the basil in the palm of my hand to bring out the flavour)
2 Tablespoons honey
1 cup vegetable stock or water
1/4 cup butter or margarine
3 Tablespoons flour
3 cups milk

Combine tomatoes, celery, onion, basil, and honey with vegetable stock or water in a soup pot. Simmer for 20 to 25 minutes. Push mixture through a sieve (it helps to put it in a blender first or use an immersion blender). Set aside and melt butter or margarine in a saucepan. Add flour and blend until smooth. Add 2 cups milk slowly and stir until thickened. Combine with tomato mixture. Stir over low heat, adding last cup of milk. Do not boil. Season to taste. Serves 4 to 5.
