Ingredients: 200 ml lemon juice Zest from 3 lemons 4 egg yolks 1 cup sugar 75 gr butter in small cubes
Preparation: Put some water in a sauce pan in medium heat. When the water simmers put a bowl on top. Put in the bowl the egg yolk, the lemon juice, the lemon zest and the sugar and whisk continuously until the mixture thickens. Add the butter (one cube at a time) and whisk until it melts. Chill for 6 hours at least.
