Pesto Chicken & Butternut Pumpkin Spaghetti

This is a very tasty pasta dish that strays from the more traditional cream or tomato sauce based pasta options. Add in chicken which, for me, is always a great mix with pasta and provides a more substantial meal. This is a great merging of two strong flavours. The basil pesto & butternut pumpkin blend perfectly to complement each other. Mixed through with chicken and spaghetti, or other pasta of your choice, and you have a wonderful quick meal that uses few ingredients but is packed full of flavour.

Ingredients:
• 350 g Spaghetti
• 600 g Butternut Pumpkin peeled and cut into 3cm cubes
• 1 tbsp Olive Oil
• 600 g Chicken Fillets use thigh fillets thinly sliced
• 1 Brown Onion diced
• 200g Basil Pesto

Instructions:
1. Cook pumpkin for approx 15 minutes in a steamer over a saucepan of boiling water.
2. While pumpkin is boiling, cook the spaghetti according to the packet instructions. Drain water and set aside, if necessary.
3. While pumpkin is boiling, heat 1 tbsp olive oil is a large frying pan over medium high heat.
4. Add chicken to frying pan (in batches if necessary) and cook until browned and almost cooked through. Set aside and keep warm.
5. Add onion to pan and cook for about 5 minutes until tender.
6. Add chicken and spaghetti to pan and stir to mix through.
7. Add pesto and stir to mix through and coat the chicken and spaghetti. Cook for a further 5 minutes until chicken is cooked.
8. Add pumpkin, stir to mix through then remove from heat and serve.
