Can I make braised short ribs in a dutch oven at a higher temperature than recommended?

My oven will not stay hot unless I heat it to 375 degrees or more. Anything less than that and it will heat up to the desired temperature but will not hold that temperature and go right back to being cold. I got myself a dutch oven and have been dying to make braised short ribs but all of the recipes I see say the temperature needs to be at 325. I was wondering if I could still make it work with the oven set to 375?
