Tonight I made my first homemade curry in a long time and I've completely forgotten all about how best to make it. Tastes good and made enough for the week, but would love to hear some of your alternatives!
I used:
Chicken thighs
Butternut squash
Onion
Chickpeas
Pepper
Tomatoes
Spinach
Garlic
Yoghurt mixed with curry powder (tumeric, garam masala & cumin)
Roasted the squash, cooked (nearly) everything else in a large sauce pan until the squash was ready then added. Added the yoghurt mix and spinach then served with rice.
