Stir - Fried Cashew Ginger Chicken

Ingredients

  • 4 tsp vegetable oil
  • 3 tsp soy sauce
  • 1 package chicken breast, cut into cubes (the package I used had 3 decent sized breast.)
  • 1/3 cup ginger, cut up into small fourth sized pieces
  • 3 cloves garlic, sliced pretty thin
  • 1/4 cup crushed cashews
  • 2 tsp chili oil (with some of the seeds)
  • 1/2 onion, julienned
  • 2 tsp curry powder
  • 2 tsp fish sauce
  • 2 tsp honey
  • (optional) 1 jalapeno, cut into fourths

Cooking

  1. in a wok, add the vegetable oil and cook the crushed cashews for 2 - 3 minutes. add in the onions, ginger and garlic and cook until onions are soft and until you can really smell the garlic cooking (don't burn the garlic).
  2. on high heat, add the chicken and cook until the chicken starts to turn white (about 2 - 3 minutes). add in the soy sauce, curry powder, fish sauce, honey, chili oil and cook on high heat for 5 more minutes. This serves great on cooked clear rice noodles, vermicelli style noodles or rice. If you choose to use the jalapeno, add it in when adding in the onions.
