Tonight I made an off-the-cuff vegetable soup recipe for dinner and it was decent for my first organic, self-made recipe. I just wanted to see if y'all had any tips on how I could spice it up for next time!

As for the good part, here's the recipe:
Ingredients
- 3 Stalks Celery; 1/4 inch slices
- 3 Large Carrots; 1/4 inch slices
- 1 Large Yellow Onion; Large Dice
- 1 tbs garlic paste
- 2 tbs vegetable oil
- 1 package Spinach
- 7 Basil Leaves; Roughly Chopped
- 1 container White Mushrooms; 1/4 inch slices
- 48 oz Low Sodium Vegetable Broth
- 1 can Crushed Tomatoes
- 1 cup of dried Quinoa (cooked using package instructions)
- Salt and Pepper to taste
Directions
- Add oil to a large pot. Heat over medium-high heat until oil shimmers.
- Add the onion and garlic paste to the oil and cook until edges of the onion become translucent.
- Add the sliced carrots, celery, and mushrooms to the pot and cook until edges of the carrots become tender.
- Add the tomatoes and vegetable broth. Bring to a boil and then reduce to a simmer. Cover
- Reduce soup for 15 minutes stirring occasionally.
- Add spinach and quinoa.
- Salt and pepper to taste.
- Turn off heat and add basil.
- Eat.
