- For the muffins
- 1 box of spice cake mix (I used betty crocker)
- 1 15oz can of pumpkin puree
- 1 cup of milk
- For the streusel topping
- 1/2 cup brown sugar, packed
- 3 tbsp. white sugar
- 1/2 cup butter, melted
- 1 cup flour
- 1/4 tsp. cinnamon
- 1/4 tsp. salt
- 1/2 cup pecans, chopped (optional)
- Directions
- For the muffins
- 1. Mix cake mix, can of pumpkin and milk into a bowl until combined.
- 2. Scoop batter into each individual muffin liner until 3/4 full.
- For the streusel
- 1. In a separate bowl whisk brown and white sugars with butter until the sugar dissolves.
- 2. Add in the flour, salt, cinnamon and pecans, stirring until you get a pea-sized crumbles.
- 3. Sprinkle each muffin with streusel topping, patting the topping in gently into the batter.
- 4. Bake at 350 degrees for 12-15 minutes. (I followed the directions for mini muffins on the back of the cake mix.)
