Mini Pumpkin Streusel Muffins

  • For the muffins
  • 1 box of spice cake mix (I used betty crocker)
  • 1 15oz can of pumpkin puree
  • 1 cup of milk
  • For the streusel topping
  • 1/2 cup brown sugar, packed
  • 3 tbsp. white sugar
  • 1/2 cup butter, melted
  • 1 cup flour
  • 1/4 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/2 cup pecans, chopped (optional)
  • Directions
  • For the muffins
  • 1. Mix cake mix, can of pumpkin and milk into a bowl until combined.
  • 2. Scoop batter into each individual muffin liner until 3/4 full.
  • For the streusel
  • 1. In a separate bowl whisk brown and white sugars with butter until the sugar dissolves.
  • 2. Add in the flour, salt, cinnamon and pecans, stirring until you get a pea-sized crumbles.
  • 3. Sprinkle each muffin with streusel topping, patting the topping in gently into the batter.
  • 4. Bake at 350 degrees for 12-15 minutes. (I followed the directions for mini muffins on the back of the cake mix.)
