This is the easiest bread I have ever made, and it tastes great. Nice crusty outside and soft, but chewy inside. It is only about 5 minutes active time. You can play with the flour proportions, but this is my favorite.
No Kneed Bread
Ingredients:
2 cups whole wheat flour 4 cups AP flour 4 t kosher salt (half if using table salt) 1 t yeast 3 cups water
Directions:
Mix up everything and leave covered overnight
Preheat a Dutch oven in a 450 degree oven for 30 minutes
While oven is preheating empty dough on heavily floured surface. Form into round with creases on top.
Put dough into Dutch oven with creases still facing up.
Cook for 30 minutes covered. Remove lid and cook 30 minutes more.
Remove from Dutch oven and cool on rack.
