My grandma made this spaghetti for years and it was my favorite growing up. Wanted to share.

I know certain ingredients will sound scary/gross/lazy (the soup) but holy cow don't knock it til you try it.

1 medium or large onion chopped (to your liking )
2T oil
1 lb Hamburger
1tsp salt
1/4th tsp ground black pepper
1/4 tsp cayenne pepper
1/2 tsp chilli powder
1/3 tsp Tabasco sauce
1 can condensed mushroom soup
1 can condensed tomato soup
8 oz spaghetti

Cook onions in oil over medium-low heat until translucent. Add hamburger meat, turn heat to medium, and mix thoroughly. While the meat browns boil water for your pasta. Once the water is boiling break your 8oz of spaghetti in half and add to water (cook normally 10-12 minutes). When the meat is cooked through add all seasonings, Tabasco sauce, and soups. Lower heat to low stirring occasionally while pasta finishes boiling. When pasta is finished drain and add to meat saucr. After all ingredients are combined simmer for 45 min on low.

The simmer is key to this recipe. She got this from an old cook book and it is called Irish-Italian Spaghetti. Presumably named by someone unfamiliar with Irish cuisine and assuming all things pasta are instantly Italian. Still it is a shockingly delicious pasta recipes. Highly recommend.

Those who have a strong sensitivity to spice/heat be warned. If you like spicy food at all you will barely notice a kick though.

Hey everyone! I bought a really nice dark beer vinegar however I realized foolishly that I don't know of any good way to use it other than with fish and chips like a malt vinegar or maybe as part of a marinade. You guys got any ideas for other ways to use such a vinegar?

Ma 'Karuni bil-Djaj Mishwi Taratur (Macaroni and Grilled chicken in Taratur Sauce)

Ingredients

Chicken

  • 2 packages drumsticks (the ones i used had 5 each)
  • salt
  • pepper
  • 2 tablespoons olive oil
  • 2 tablespoons cumin
  • 3 cloves garlic, minced

Sauce

  • 3 cloves garlic, mashed
  • 1 tsp salt
  • 1/4 cup water
  • 1/2 cup tahini
  • 3 tablespoons lemon juice
  • 1/2 a bunch of parsley, chopped

Macaroni

  • 1 lb macaroni noodles
  • salt
  • oil
  • 1/2 onion, sliced in rings

Cooking

  1. in a frying pan, add in the onion slices and very small amount of oil on very low heat. fry onions until golden browned and somewhat crisp (it was about 30 - 35 minutes for me). in a large bowl, combine the chicken and the salt, pepper, cumin, olive oil and garlic. after combining well, set in fridge for 2 hours or more (over night is best). grill chicken in a cast iron pan on high heat until chicken is cooked (juices run clear, 165+F in temp) or you can also place chicken in a foil covered baking tray/dish and place chicken under broiler in your oven until chicken is well grilled all over and chicken is cooked.
  2. while chicken is cooking, make the sauce and the macaroni. in a medium sized mixing bowl, combine the sauce ingredients and mix well. place in fridge for at least one hour before use.
  3. in a pot combine water, salt and oil and bring to a boil. once boiling, add macaroni noodles and boil for 5 minutes. turn heat off and cover with a lid and let sit for another 5 minutes. drain the noodles and and run cold water over them and lest the noodles cool for at least 5 - 10 minutes. return to the pot. take now removed from bone chicken and add in to the noodles. add in the taratur sauce and combine well. garnish with more chopped parsley.
  • you can also serve this as a hot dish by timing the noodles and chicken (cook noodles at the last 10 minutes of the chicken cooking) and don't refrigerate sauce before use. also, if you do the hot version, mix in 2 tablespoons crushed feta cheese. I like to serve this with baba ganoush and fattoush.

Charred Cabbage With Mustard, Apple, Rosemary Vinigrette. An easy recipe for a lazy summer afternoon.

Ingredients

  • 1 head of green cabbage, halved

  • 2 tbsp dijon mustard

  • 1 apple, seeded and finely diced

  • 2 sprigs rosemary, finely diced

  • 2 tsp apple cider vinegar

  • 1/4 cup olive oil

  • Salt and pepper to taste

  • Honey, optional

Directions

Heat bbq on high. Place cabbage face down on grill. Cook for about 30 minutes, turning every so often. The outside will be totally black but the inside should be soft and sweet. Once finished, let cabbage cool slightly and then cut into large pieces. For vinaigrette, add dijon, apple, rosemary, apple cider vinegar, oil, salt and pepper to bowl. Mix to combine. Pour vinaigrette over chopped cabbage.

Thai Red Curry

INGREDIENTS

  • Chicken breast - 2
  • Thai red curry paste - 2 TBSP
  • Oil - 2 tsp
  • Ginger - 4 slices
  • Garlic - 1 minced
  • Onion - 1/2
  • Red bell pepper - 1/2
  • Green bell pepper - 1/2
  • Carrot - 1-2
  • Sugar - 1 1/2 TBSP
  • Fish sauce - 1 TBSP
  • Coconut milk - 1/2 can
  • Fresh basil leaves - A handful

INSTRUCTIONS

Cut the chicken breast into thin strips and season with salt and pepper, set aside.

Have all your vegetables ready, slice the onions, ginger, peppers and carrots thinly. Minced the garlic. Set aside.

In your wok or non stick pan, heat up the oil on medium high and add the chicken, cook for 2 minutes just to get a nice sear on them but not fully cooked. Add the ginger, garlic and the vegetables and fry for another minute, add the Thai red curry paste and sugar. After 1 minute, add the coconut milk and the fish sauce. Taste and adjust if needed. You can add a splash of water or stock if it's a bit thick. If you want it to be a bit spicier add more red curry paste. Turn off the fire and add the basil leaves. Serve with white rice.

[Request] WINNING Cupcake Recipe

I am attending a 4th annual cupcake wars party next weekend and am looking for ideas for a winning cupcake.

Past winners: chocolate peanut butter, Nutella cheesecake, and chocolate peanut butter (again)

I've made snickerdoodle, pumpkin cheesecake, and grasshopper cupcakes and I've always ended up coming in 2nd or 3rd place. I generally use Pinterest to find recipes but this year I'm finding all of the recipes have been done before or just don't seem like winners to me.

Any ideas would be appreciated!

(Note: cupcakes are generally judged based on taste, not so much on presentation)

Cal-Tex Chili

CAL-TEX chili

Cal chili

Saute in 1 tsp oil:

1 onion chopped

2 garlic chopped

Until onion is soft.

Add:

1 tsp sugar

2- 28oz cans diced tomatoes

3- 15oz cans red kidney beans, drained

2- 15oz cans hot chili beans, drained

2- 15oz cans Ranch Style beans w/ jalapeño, drained. (This is a type of pinto bean recipe from Texas so hopefully you can get them. If not try and find a flavored pinto bean can with peppers.)

1- 4oz can chopped green chiles

3/4 cup of good Cabernet Sauvignon or other hearty red wine. (Drink rest)

Simmer 2 hours.

TEX chili

Cook 6 strips bacon-diced-until crispy

Add:

3 lb large chili grind ground beef

1 lb ground pork

1 lb thin round steak. Sliced thin against the grain.

Don't over cook and drain well.

Add:

2 oz mild or medium chili powder

2 oz medium or hot chili powder

1 tbs sugar

1 tbs salt

1 16oz can of Mexican beer or other good quality lager.

Simmer about 1 hour until chili powder makes a sauce.

Serve:

2:1 ratio Cal to TEX

Top with cheese, diced onion and sliced avocado. Maybe a dollop is sour cream.

Tired of Thin Layer Cakes – Here’s a Trick to Fix That! Yellow Layer Cake with Mini Chocolate Chips and English Toffee Bits

For those of you who prefer seeing photos with a recipe, I've included a link below.

I don’t know about other parts of the world, but the cake mixes in the States have been getting smaller and smaller – which is so wrong. I’d rather pay a bit more and have a nice, fat layer cake.. We have no control over what the stupid cake mix companies do, but luckily there’s a few things you can add to be sure your layer cakes come out bigger. (You may decide it’s just easier to make a cake from scratch – and that works too!)

Directions for a ‘Bigger and Better’ Layer Cake with Mini Chocolate Chips and English Toffee Bits

Oven at 350F Bake for 30 – 35 minutes Two greased 9” round cake pans

Dry Ingredients for ‘Add-In’ Batter

  • 3/4 cup flour

  • 1/4 cup brown sugar or granulated sugar ++ I used brown

  • 1 teaspoon baking powder

  • 2 pinches salt

Mix flour, sugar baking powder and salt together in a medium bowl.

Liquid Ingredients for ‘Add-In’ Batter

  • 1/2 cup water

  • 1/4 cup oil

  • 1 egg

Add liquid ingredients to dry ingredients. Beat with mixer for about 30 seconds until well blended. Set bowl aside.

Mini Chocolate Chips and English Toffee Bits

Add chocolate chips and English Toffee Bits after ‘Add-In’ batter and cake mix batter have been prepared and mixed together.

  • 1/2 cup mini chocolate chips

  • 1/2 cup English Toffee Bits ++ I used ‘Heath’ Brand

  • 1 Tbs. all purpose flour

Adding a bit of flour keeps chocolate chips and English Toffee Bits from sinking to the bottom of the cake!

Method

Mix mini chocolate chips, English Toffee Bits and flour in a small bowl. Set aside.

Prepare cake mix according to package directions. Mix in your Add-In batter and beat for 30 – 40 seconds, or until well blended.

Gently mix in ½ cup mini chocolate chips and ½ English Toffee Pieces which have been mixed with 1 Tb. flour.

Divide batter equally between two greased 9” round cake pans.

Bake at 350F for 30 – 35 minutes – or until toothpick or sharp knife inserted in center comes out clean. ++ Because of the ‘Add-In’ batter, your layers may take 3 – 5 minutes more time than usual.

Cool cakes on wire rack for 15 minutes. Remove cake from pans and cool completely before frosting. Enjoy!!

(I broke my ankle last night... soooo... I couldn't prepare my really delicious homemade chocolate frosting but I promise to post the recipe soon.)

Vegetarian Stroganoff

PLEASE NOTE: this recipe utilises Australian metric measurements - an Australian metric cup is 250ml, an American cup is 240ml, so, unless you're baking something precise, no conversion is necessary. It is advised, however, that you convert grams into whatever crazy nonsense measurement you use over in the US if you're not familiar with the metric system already.

Vegetarian Stroganoff

Ingredients

2 tablespoons butter

1 large onion, chopped

500 grams Portobello mushrooms, sliced (any type of mushroom will do if you can't get Portobellos)

¾ cups vegetable stock

¾ cup of white wine

1 ½ cups sour cream

3 tablespoons all-purpose flour

¼ cup chopped fresh parsley

225 grams dried egg noodles

Parmesan cheese

Directions

  1. Melt butter in a large heavy skillet over medium heat. Add onion, and cook, stirring until softened. Turn the heat up to medium-high, and add sliced mushrooms. Cook until the mushrooms are limp and browned.
  2. Bring a large pot of lightly salted water to a boil. Add egg noodles, and cook until al dente, about 7 minutes. Remove from heat, drain, and set aside.
  3. At the same time, and in the same skillet, stir in vegetable broth and wine, being sure to stir in any browned bits off the bottom of the pan. Bring to a boil, and cook until the mixture has reduced by 1/3. Reduce heat to low.
  4. Remove the pan from the heat, stir together the sour cream and flour; then blend into the mushrooms. Return the skillet to the burner and continue cooking over low heat, just until the sauce thickens. Add the parmesan and allow to melt through the sauce. Stir in the parsley, and season to taste with salt and pepper. Serve over cooked egg noodles.

Note: Make sure your mushrooms and onion are nice and browned before you add the broth and wine. If they're not browned, the sauce will look very white once you put in the sour cream. This doesn't really affect the taste, but the nice brown colour you expect really does add to the presentation. Additionally, this meal goes FANTASTICALLY with white wine, so if you're having guests over, or are an alcoholic like me, buy a nice bottle of white to put into the recipe, because you'll be left with most of a bottle of wine to drink over the course of the evening.

Best syrup/sugar for hot chocolate and mocha?

Hi everyone, what do you think is the best syrup/sugar for hot chocolate and mocha? I'd prefer something that only complement or enhance the chocolate flavor without having a distinctive taste itself, except for sweetness. So far I've tried vanilla and maple syrup and they don't quite meet that requirement. Thanks!

Rice Meammar; authentic Egyptian dish loaded with flavors and rich

Ingredients

1.5 cup of short grain rice - like cal rose. 2 Table spoon unsalted butter, divided. * 5 chicken tenders. 1/2 teaspoon salt, or to taste. 1/4 teaspoon freshly ground black pepper. 2 Tablespoon sour cream. 1 Table spoon Mascarpone cheese. 1.5 cup broth, any type. 1.5 cup milk. 

Instructions

Start by washing the rice and soak in water for 15 minutes. Egyptian food Preheat the oven to 350F. Meanwhile in a pan over medium heat, melt 1 Tablespoon of butter and brown the chicken tenders, 2-3 minutes each side, season with some salt and pepper, set aside. Egyptian food Drain the rice, add salt, pepper, sour cream, mascarpone cheese and the remaining 1 Tablespoon of butter, mixing all very well until all rice is covered well. Egyptian food In a deep oven dish, authentically a clay one, add about 5 Tablespoons of the rice mixture to cover the bottom and spread evenly. Egyptian food Add the chicken pieces if using, then cover with the remaining rice, level the surface. In a pot over medium heat, add the milk along with the broth and bring to a boil, turn off the hear and season with a dash of black pepper. Egyptian food Add the hot liquids to the rice , place the dish into a bigger oven dish or pan filled halfway with water. Bake in the oven for almost an hour until the rice is fully cooked and the surface turns golden brown. Let it cool down and serve. Enjoy!! 

Notes

* The addition of chicken is optional but recommended, you can make it meatless, or with any kind of meat you have.

Recipe [Request] Waffle recipe that has all of the bells and whistles.

My kids are aged 1 & 3. They eat excellent throughout the day, except breakfast because they vomit if they eat eggs. I'm trying to find a great waffle recipe that isn't too unhealthy for them to eat every morning (and so I can make one big batch and freeze them). Have one? Please share it with me! Mother's Day Brunch Ideas?

Every year, I host a Mother's Day brunch at our house. Usually, we have some sort of fruit course, a pastry/bread item, an egg dish (or two or three), some breakfast meats (sausage/bacon), my father-in-law's skillet potatoes, some sort of dessert, and a signature cocktail. Is anybody else doing something similar? I'm looking for some more unique ideas. My menu isn't frowned upon by any means, I just get tired of making the same stuff.

Last year was a berry salad with mint-infused simple syrup, bagels and flagels from scratch with plain and olive cream cheese, migas, bacon/sausage, previously-mentioned potatoes, coffee cake, and mimosas/bloody marys.

Bliny Recipe (snack)

  • Mushrooms - 6-7
  • Milk - 2cups and 1 cup
  • Flour - 2 cups and 2 tbsp
  • Eggs - 3
  • Oil - 2 tbsp
  • Dill - 1/4tsp
  • Nutmeg - 1/6tsp
  • Marjoram - 1/4 tsp
  • Salt, pepper

  • Chop mushrooms and fry them for 10 min at medium heat. Add salt and pepper. After 10 minutes add 4 tbsp of milk or cream, dill, marjoram and nutmeg. Mix all, cook for 2 minutes. At the end, add 2 tbsp of flour, QUICKLY mix it. If the mixture gets too thick, add some more of milk (about 1/2 cup). Take it off the heat. Let cool down.
  • Crack 3 eggs. Whip them a bit before adding salt, pepper, milk, flour and oil. Mix it until the batter will have smooth consistency. And start making thin pancakes.
  • Place a little bit of mushrooms on top of you pancake and wrap it as you wish.

With this amount of products, we’ll get 14 pieces.

RIGATONI JAMBALAYA - MACARRONES JAMBALAYA

I love jambalaya, I love pasta... I was at a restaurant the other day and saw something similar so.... It's pretty simple and it won't take you long. It's perfectly spicy and the rigatoni gives it an amazing soft flavor. Give a try!

INGREDIENTS ​1lb Rigatoni ​1 Chicken Breast 3 Andouille Sausage 1/4lb Shrimp 1/2 Onion 3 Garlic Cloves 1 Bell Green Pepper 2 Tomatoes 1 Chicken Broth Cube 2 Bay Leaves 1 Cup of White Wine 2 Cups of Water 4 Ts Cajun Powder 3 Ts Olive Oil ​Salt Pepper

STEP BY STEP 1. Chop the garlic and onion. 2. Cut the chicken in cubes and add salt and pepper. 3. Slice the andouille. 4. Chop the green pepper. 5. Chop the tomatoes. 6. Saute the garlic and onion with olive oil in a pan. 7. Add the chicken and the andouille. Grill them well. 8. Add the shrimp. 9. When everything is fully cooked add the white wine. Let the alcohol evaporate. 10. Add the tomatoes and the pepper. 11. Add the chicken broth cube. 12. Add the water and the bay leaves. 13. Add the cajun powder. Stir well and let it simmer for 20 minutes. 14. Cook the pasta. Leave it very aldente, a bit undercooked. 15. Drain it and put it back in the pot. 16. Add the "jambalaya". 17. Mix well and simmer for 10 minutes.

So...what do you think? I just love this recipe, I can eat the whole pound of rigatoni my self! I hope you like it!

Me encanta el jambalaya, me chifla la pasta...así que decidí ponerlos juntos en este receta guapísima. Es muy fácil y no te llevará mucho hacerla. Es perfectamente picante y los macarrones le dan un sabor suave genial. ¡Pruébalo!

INGREDIENTES 500g de Macarranes Rigatoni 1 Pechuga de Pollo 3 Salchichas Andouille 200g de Gambas 1/2 Cebolla 3 dientes de ajo 1 Pimiento Verde Campana 2 Tomates 1 Pastilla de Caldo de Pollo 2 Hojas de Laurel 1 taza de Vino Blanco 2 tazas de Agua 4 cucharadas de Especia Cajún 3 Cucharadas de Aceite de Oliva Sal ​Pimienta

PASO A PASO 1. Trocea el ajo y la cebolla. 2. Trocea el pollo en cubos y échale sal y pimienta. 3. Corta la salchicha andouille en rodajas. 4. Trocea el pimiento verde. 5. Trocea los tomates. 6. Dora el ajo y la cebolla en un poco de aceite de oliva en una sartén. 7. Añade el pollo y la andouille. Dóralos bien. 8. Añade las gambas. 9. Cuando todo esté bien hecho añade el vino blanco. 10. Añade los tomates y el pimiento. 11. Añade la pastilla de caldo de pollo. 12. Echa el agua y las hojas de laurel. 13. Echa la especia cajún. Revuelve bien y cocina a fuego lento 20 minutos. 14. Cuece la pasta. Déjala durita no dejes que se hablanfe mucho. 15. Escúrrela y vuelve a ponerla en la olla. 16. Echa el "jambalaya" 17. Mézclalo bien y deja cocinar a fuego lento 10 minutos.

Looking for Everyday recipes

Stay at Home Dad Aka Chef, I plan purchase and cook all the meals. My ideas are getting a little stale and I end up making Hamburger helper. I've made mid to high end meals. One pot Mexican Quinoa, grilled Chicken, steak, and Taco Tuesday and Meatless Mondays. Anyone know of a place to get everyday recipes that aren't over the top? Anything would be great! I have high cholesterol so I use Ground Turkey and Chicken but any recipes are fine as I always substitute with those. I purchased How to cook everything and use that a lot. Thanks Reddit

Nice Little Fish, Sweet Potato, and Chimichurri Dish

A nice little fish, sweet potato, and chimichurri dish that sits nicely on a great lunch table or even a just a light simple meal.

Recipe

Ingredients

  • 1 1/2 cups freshly packed parsley leaves

  • 1/2 cup cilantro

  • 1-2 cloves garlic

  • 2 Tbsp. rice wine vinegar

  • 1 tsp. lemon zest

  • 1-2 Tbsp. lemon juice

  • 1/4 tsp. crushed red pepper flakes

  • 1 tsp. sea salt

  • 1/2 cup olive oil (a little more or less if you need it)

  • 4 pieces of fish (tilapia or mackerel or something similar)

  • 2 cups sweet potato (a little more if you want)

Directions

Make the chimichurri by combining parsley leaves, cilantro, cloves garlic, rice wine vinegar, lemon zest, lemon juice, crushed red pepper flakes, sea salt and 1/2 cup olive oil.

Cut the sweet potato flakes into 1/2 inch squares, cook for roughly seven minutes. Remove and put into cold shak water to prevent further cooking. Then remove to a flat pate to dry.

Place the fish and the sweet potatoes on the grill at about the same time, flip 2-3 minutes per side and remove the fish and sweet potatoes.

Assemble by plating the sweet potatoes, fish and curry sauce and serve immediately.

Note: Chimichurri and sweet potatoes can be held for a day or two in the fridge.

  • Chop mushrooms and fry them for 10 min at medium heat. Add salt and pepper. After 10 minutes add 4 tbsp of milk or cream, dill, marjoram and nutmeg. Mix all, cook for 2 minutes. At the end, add 2 tbsp of flour, QUICKLY mix it. If the mixture gets too thick, add some more of milk (about 1/2 cup). Take it off the heat. Let cool down.

  • Crack 3 eggs. Whip them a bit before adding salt, pepper, milk, flour and oil. Mix it until the batter will have smooth consistency. And start making thin pancakes.

  • Place a little bit of mushrooms on top of you pancake and wrap it as you wish.

With this amount of products, we’ll get 14 pieces.

Looking for a filling side salad to go with japanese-ish pulled pork

As the title says. I would prefer the side to be a salad with a filling component like avocado or beans. The pulled pork is seasoned with rice vinegar, garlic, ginger, lemon grass, soy, a bit of sugar and chicken stock.

1/2 cup water
2 tbsp butter, cubed
1/4 tsp salt
1/8 tsp black pepper
1 tbsp herbes de provence
1/2 cup flour
2 large eggs
3/4 cup grated parmesan cheese

Preheat oven to 425. Heat water, butter, salt, pepper, and herbes in a saute pan until butter is melted. Add flour in one go and stir rapidly until it forms an even ball and comes away from the sides of the pan. Turn out into a stand mixer and mix on low to medium. Add one egg at a time and continue to mix until the lumpy batter evens out, about 2-3 minutes. Add 1/2 cup cheese and mix in thoroughly. Add to a pastry bag (or to a freezer bag, clipping the corner off). Pipe even balls, just smaller than ping pong size (around the size of a medium radish) evenly spaced on a parchment-lined baking sheet. Sprinkle with remaining cheese. Bake for 10 minutes, then reduce heat to 375 and bake an additional 20 minutes or until gougeres are browned along all sides. Remove and serve while still warm.

300g grated carrot 5 eggs 180g butter, softened 2 very ripe medium bananas 140g almonds, ground 20g flaxseed (if you don't have this, sub with more ground almond) 30g coconut, shredded 50g walnuts, chopped 2 tsp baking powder 2 tsp cinnamon 1 tsp mixed spice 2 tsp vanilla essence 1½ tsp stevia 100g cream cheese, full fat 

Method

Beat eggs, softened butter, bananas, stevia, and vanilla together. Add grated carrot, walnuts and coconut, then mix in ground almonds, flaxseed (if using), spices and baking powder. Pour into greased muffin tin. Bake at 180 Celsius for 30 minutes or until a fork pushed in, comes out clean. I use a silicone mould as I find they are the most helpful at getting muffins out in one piece. For the cream cheese frosting, stir in ½ tsp of stevia or sweetener of choice and add a couple of dashes of cinnamon. Spread onto the muffins once they have cooled.

Tangy cilantro chickpea salad

Ingredients

  • 5 cups chickpeas or garbanzo beans, drained and rinsed
  • 2 cups chopped cilantro
  • 1/4 cup lime juice
  • 1-2 cloves of garlic (depending on your liking)
  • 2 tablespoons olive oil
  • 3/4 teaspoons ground cumin
  • Salt and Pepper to taste
  • Sliced Avocado (optional)

Instructions

  • Puree the cilantro, garlic, olive oil and cumin.
  • Toss with drained chickpeas
  • Season to taste with salt and pepper
  • Top with avocado (optional)

Gluten-Free Chocolate Cake

Ingredients:

  • 2 1/2 cups chickpea flour
  • 1/2 cup cocoa powder
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1/2 cup coconut or vegetable oil
  • 1 cup sugar
  • 1/4 cup milk or almond/coconut milk if dairy-free

Directions:

  1. Preheat the oven to 350° F.

  2. In a medium mixing bowl, combine the flour, cocoa, baking powder, and salt.

  3. In a separate bowl, beat the eggs, oil, sugar, and milk.

  4. Slowly add the dry ingredients to the wet ingredients.

  5. Grease an 8-inch round cake pan, and pour your batter into it.

  6. Bake the cake for 27-30 minutes. You should be able to insert a toothpick in the middle and have it come out clean.

  7. While your cake is cooling after the bake, go ahead and start in on your frosting.

Peanut Butter Frosting

Ingredients:

  • 5.5 oz goat cheese or cream cheese (about half a cup)
  • 3 tbs peanut butter
  • 4 tbs honey
  • 1/2 cup powdered sugar

If you don't like the taste of goat cheese, then I suggest you use cream cheese instead. In fact, the cake itself should be moist and sweet enough to not really need frosting if you don't want it.

Directions:

  1. Beat your goat cheese or cream cheese until it is light and fluffy.

  2. Add the peanut butter and honey, and beat the mixture again.

  3. Finally, add the powdered sugar. This will change the consistency of the frosting. It will look glossier and be a bit runnier. Don't freak out. It's supposed to be this way.

  4. If your cake is cool enough, top it with the icing. Then cut a slice and enjoy!

Double-Mashed Potatoes

I've always had problems with the consistency of my mashed potatoes, so I used Occam's razor to cut them this time around.

Ingredients

6 Potatoes 1/4 Cup (1/2 stick) Softened Butter 1/2 Cup, 1 pinch Salt 4 Tablespoons, 1 pinch Garlic 1 pinch Pepper 1 pinch Cumin 1 pinch Paprika

Process

  1. Clean, peel, and dice all the potatoes. Separate into two equal groups.
  2. Boil the first group of potatoes with a pinch of Salt, Garlic, Pepper, Cumin, and Paprika until the potatoes mash against the side of the pot with very little effort.
  3. Strain the potatoes, mash thoroughly in a bowl with 4 Tablespoons Garlic and 1/4 Cup Softened Butter
  4. Boil the second group of potatoes with 1/2 Cup Salt until the potatoes are soft enough to mash against the side of the pot, but still require effort to do so.
  5. Strain the second group of potatoes, mash into bowl from before

The end result isn't overly salty, overly chunky, or overly creamy. In my books, that's perfect.

Basbousa; this version is so moist and delicious

Semolina is a stable in the middle eastern cuisine, and basbousa is so divine:)

Basbousa

Ingredients

3 cup semolina. *2 Tablespoon fine, unsweetened coconut flakes. 3/4 cup sugar. 1/2 teaspoon baking powder. 1/2 cup unsalted butter. 1/2 cup milk. 

Simple syrup

2 cup water. 2 cup of granulated sugar. A dash of vanilla powder or a teaspoon of orange blossom water. 

Instructions

In a bowl, combine the first 4 ingredients and mix well. basbousa Warm the butter and milk, until butter is melted and add to the above mixture. basbousa Mix all the ingredients until well incorporated and all the grains are wet. basbousa Butter a 13x9 cookie sheet or a 16" pizza pan, and spread the batter evenly. basbousa Brush the surface with some simple syrup. basbousa Sprinkle nuts on top or arrange in a decorative way. basbousa Bake in a 350F preheated oven, bake for 15 minutes, then broil for another 5 minutes until golden brown, be careful and keep an eye on it. Meanwhile, prepare the simple syrup by adding sugar and water together, Boil for 10 minutes using medium heat, turn of the heat then add the vanilla or the orange blossom water. Soak in hot simple syrup, and let it cool. Serve and Enjoy!!. 

Notes

* The addition of coconut flakes is optional

Vegetable and Rice Stew

Step by Step Pictures

  1. Find a deep dish, I love using clay dish for this meal.

  2. Take 5 potatoes pill them first (or don’t if they are new) and chop them into cubes.

  3. Add 3-4 pilled carrots, chopped into circles.

  4. Add 1-2 beetroot pilled and chopped into cubes (I love adding beetroot in my meals)

  5. Add 1 eggplant, chopped into cubes

  6. Add 1 zucchini also chopped into cubes

  7. Add 2/3 cup of rice

  8. Add 1 onion, sliced in circles and put it on the top of the vegetables

  9. Add salt, black pepper, turmeric and olive oil

  10. Before you put it in the oven, cover it first

  11. Stew for 2 hours on 180 C

When it’s all done, serve it with few leaves of rosemarie and soy sauce.

So I ended up with two pretty big bags of curry leaf and I never used whole leafs before. Anyway to use them up? I don't want them to go bad but I also don't want to have to spend a lot of money on exotic spices I'll rarely use to go with it. What can I do?

Garlic Curry Burgers

This is a fairly quick and easy meal to prepare. You can make changes to it so it is more authentic, but the way I did it turned out fantastic. Ingredients

2 pounds lean ground beef (I used chicken)

1 1/2 cups chopped sweet onion

1 egg, lightly beaten

3 tablespoons evaporated milk (used regular milk)

1 tablespoon Worcestershire sauce

3 large cloves garlic, minced

1 tablespoon mild curry powder

1 tablespoon steak seasoning

Directions

Preheat an outdoor grill for high heat. (I used a frying pan)

In a bowl, mix the beef, onion, egg, evaporated milk, Worcestershire sauce, garlic, curry powder, and steak seasoning.

Form the mixture into 8 patties.

Grill the patties over indirect heat for about 5 minutes on each side, or until done.

Easily Cook Black Beans in a Slow Cooker

I'm always surprised that people still buy canned black beans when cooking your own black beans is so easy. Canned black beans tend to be high in sodium, whereas your own cooked beans can have little to no sodium, based on your preference.

Here's a simple recipe for cooking black beans in a slow cooker. This is particularly useful for those who work - the recipe requires minimal prep time and can cook over night or during the work day.

Step 1: Pour 8 ounces (or half a bag of a 1 pound bag) of dried black beans in the slow cooker insert.

Step 2: Rinse the black beans with water and discard any unusual objects or suspicious looking beans.

Step 3: Fill the slow cooker insert with water, roughly 3-4 inches of above the black beans. (The black beans will soak up the water as it cooks. It is better to have too much water than not enough).

Step 4: (optional) Add diced onions or jalapenos for more flavor.

Step 5: Place the slow cooker insert into the slow cooker holder and cover with lid. Set slow cooker to "low."

Step 6: Set timer for 7 hours

Also, this recipe works for any slow cooker - you don't need a built-in timer because you can use a cheap, light timer to accomplish the same task.

Char Siu Fried Rice -- Of course, that why we went there in the first place, right?

Char Siu Fried Rice

Char Siu Fried Rice is fried rice with BBQ-pork added in but that's really just a starting point. It's where you go from there that is important.

  • 1 Tbsp. hot water

  • 1 Tbsp. sesame oil

  • 1 Tbsp. Shaoxing wine

  • 1 Tbsp. soy sauce

  • 1 tsp. dark soy sauce

  • 1/4 tsp. white pepper

  • 4 cups cooked Jasmine rice

  • 1 Tbsp. oil

  • 1 medium onion, diced

  • 1 Tbsp. garlic

  • 1/2 Tbsp. peas

  • 1/2 Tbsp. carrots

  • 1 pound Chinese BBQ pork (cha siu)

  • 1 tsp. salt

  • 2 eggs, scrambled

Start by combining the hot water, sesame oil, shaoxing wine, soy sauce, dark soy sauce, and white pepper in a small bowl. This is the sauce that you'll be adding to the rice, and it's much easier to have it combined and ready to go before you start cooking.

With the wok over medium heat, add a tablespoon of oil and cook the onions until translucent then add garlic. Then stir in the roast pork. Add the tablespoon of carrots and peas. Add the rice and mix well.

Add the sauce mixture and salt and mix with a scooping motion until the rice is evenly coated with sauce.

Toss in your eggs and scallions.

Serve immediately.

Getting good sausages. What are your favorite toppings/sides?

I have tomorrow off work. I want to make sausages for my girlfriend and roommate. So I am going to try out a well known meat market here in chicago (Paulina Meat Market). They make their own, and change it up regularly.

My question to you fine people, is what are your favorite condiments, toppings, sides and whatnot for a good ol fashion sausage on a bun? Depending on what they have, it could be sausage, lamb, beef, who knows?

Bring on the slaws, sauces, caramelized veg, or whatever! I won't say no to a well made product, but I am looking to make as much as I can myself.

Rarha Chicken

Category: Main course, North Indian

Time - 35 Minutes + 1 hr for marination

INGREDIENTS

  • 1 kg chicken, cut into pieces
  • 1 cup yogurt (dahi)
  • Salt, to taste
  • 1 cup oil
  • 1 bay leaf
  • 1 black cardamom (badi elaichi)
  • 4 green cardamom (chhoti elaichi)
  • 1 tsp cumin (jeera)
  • 1 tsp coriander powder (dhania)
  • 1 tsp garlic paste
  • 2 tsp ginger paste
  • 1 onion , chopped
  • 2 tsp ginger , shredded 1 tsp chilli powder
  • 2 whole red chillies (sabut lal mirch)
  • 1 cup tomato ,chopped
  • 1 tsp turmeric powder (haldi)

METHOD

  • Whisk together the yogurt and salt and marinate the chicken in it for an hour.
  • Heat the oil and add the bay leaf, both cardamoms, and cumin.
  • When the seeds splutter add the onions and sauté till light brown. Add ginger and garlic pastes and stir for 4 to 5 minutes.
  • Stir in coriander, turmeric and chilli powder. Add the chicken along with the marinade, and cook over high heat to begin with and then medium, till cooked through, stirring a few times.
  • Cook until tender. Add the tomatoes and chopped ginger and stir. Then add the whole red chillies.
  • Stir fry till the chicken pieces are coated with the masala. Serve hot.

[Request] Simple but shockingly delicious recipes

Hey there, I'm looking for recipes that are simple and easy to make yet delicious... perhaps surprisingly delicious!

Some examples would be Gordon Ramsay's broccoli soup or spaghetti aglio e olio. I've also noticed that a lot of dishes from high-end restaurants seem to be simple in this way.

I'm looking for that sort of simple to deliciousness ratio, but nothing difficult or requiring uncommon equipment since I don't really know how to cook :).

How to make a Japanese Potato Pancake with Meat on its Pancake. The process is shown on a step by step basis and we bet you would love to try and make it.   • 10 oz. potatoes
  • 3 oz. ground pork
  • 1/6 onion, minced

  • salt
  • pepper
  • (cucumber sauce)
  • 1 cucumber
  • 3 tbsp mayonnaise

LET’S GET COOKING…

Wash and peel the potatoes. Grate the potatoes ( you can also put it through a food processor until smooth ). Drain excess water by putting it through a sieve. In a bowl, combine ground pork, onions, garlic, cumin, salt and pepper. Mix well until ingredients are incorporated. Divide into four and set aside. To make the sauce, grate cucumber and combine with mayonnaise, dill and lemon juice. Salt and pepper to taste. Heat some oil in a frying pan. Ladle four mounds of potato mixture on. Top with meat mixture followed by another spoonful of potato mixture. Cook until both sides are nice and brown. Serve hot with cucumber sauce. Grinder Turkey Club Sandwich with Caesar Salad

Ingredients

Sandwich

  • 1 1/2 lbs roasted turkey dark meat
  • 1/2 lb (about 6 slices) swiss or provolone cheese
  • 1/2 cup sliced pepperoncini
  • 1 bell pepper, sliced
  • 1 red onion, sliced thinly
  • 1 large tomato, sliced thinly
  • 1/2 cup spinach leaves (can also substitute with green/iceberg lettuce)
  • 3 tablespoons garlic aioli mustard I used this one
  • 2 tablespoons mayo
  • salt and pepper
  • 1 large sandwich roll (the one I used was 2 ft)
  • (optional) 3 hard boiled eggs chopped

Salad

  • 4 heads of romaine, chopped
  • 1/2 cup parmesane (not the sawdust stuff)
  • 1 tin anchovies in oil, drained
  • 3 cloves garlic
  • 3 egg yolks
  • 2 tablespoons lemon juice
  • 1/2 cup vegetable oil
  • 1 tablespoon dijon mustard
  • 2 tablespoons olive oil
  • salt and pepper

Making

  1. chop up the turkey meat very well and place in a large bowl. combine the mayo, mustard, salt and pepper and if you chose to use them, the chopped hard boiled eggs. mix together until well combined. place in fridge for about an hour or so.
  2. in the meantime, make the caesar dressing. in a food processor, add in the anchovies, dijon, egg yolks, salt and pepper, the first tablespoon of lemon juice and the vegetable oil. combine in food processor. while still on and combining ingredients, slowly add the olive oil a tiny bit at a time. do the same with the remaining lemon juice until all the ingredients combine to a thick, creamy consistency. pour into a bowl or a bottle and place in fridge.
  3. slice in half long ways (not completely, make it sort of like a hotdog bun) and toast the sandwich roll in the oven. I put it in my oven for 3 minutes on 200F. place on a large cutting board. spread your favorite/desired condiments on the bread. first layer is half the turkey. second layer is tomato, bell pepper, onion, pepperoncini. then layer the cheese on, the second half of the turkey, then the spinach/desired green leaf. close sandwich and slice in half or in smaller sandwiches for multiple people.
  4. place on a plate. in a large salad bowl, add the chopped romain and combine with the parmesane cheese and caesar dressing. croutons if you desire. plate a side of the salad with the sandwich. can also make this a "club" sandwich by adding bacon.
