Double-Mashed Potatoes

I've always had problems with the consistency of my mashed potatoes, so I used Occam's razor to cut them this time around.

Ingredients

6 Potatoes 1/4 Cup (1/2 stick) Softened Butter 1/2 Cup, 1 pinch Salt 4 Tablespoons, 1 pinch Garlic 1 pinch Pepper 1 pinch Cumin 1 pinch Paprika

Process

  1. Clean, peel, and dice all the potatoes. Separate into two equal groups.
  2. Boil the first group of potatoes with a pinch of Salt, Garlic, Pepper, Cumin, and Paprika until the potatoes mash against the side of the pot with very little effort.
  3. Strain the potatoes, mash thoroughly in a bowl with 4 Tablespoons Garlic and 1/4 Cup Softened Butter
  4. Boil the second group of potatoes with 1/2 Cup Salt until the potatoes are soft enough to mash against the side of the pot, but still require effort to do so.
  5. Strain the second group of potatoes, mash into bowl from before

The end result isn't overly salty, overly chunky, or overly creamy. In my books, that's perfect.
