Grinder Turkey Club Sandwich with Caesar Salad

Ingredients

Sandwich

  • 1 1/2 lbs roasted turkey dark meat
  • 1/2 lb (about 6 slices) swiss or provolone cheese
  • 1/2 cup sliced pepperoncini
  • 1 bell pepper, sliced
  • 1 red onion, sliced thinly
  • 1 large tomato, sliced thinly
  • 1/2 cup spinach leaves (can also substitute with green/iceberg lettuce)
  • 3 tablespoons garlic aioli mustard I used this one
  • 2 tablespoons mayo
  • salt and pepper
  • 1 large sandwich roll (the one I used was 2 ft)
  • (optional) 3 hard boiled eggs chopped

Salad

  • 4 heads of romaine, chopped
  • 1/2 cup parmesane (not the sawdust stuff)
  • 1 tin anchovies in oil, drained
  • 3 cloves garlic
  • 3 egg yolks
  • 2 tablespoons lemon juice
  • 1/2 cup vegetable oil
  • 1 tablespoon dijon mustard
  • 2 tablespoons olive oil
  • salt and pepper

Making

  1. chop up the turkey meat very well and place in a large bowl. combine the mayo, mustard, salt and pepper and if you chose to use them, the chopped hard boiled eggs. mix together until well combined. place in fridge for about an hour or so.
  2. in the meantime, make the caesar dressing. in a food processor, add in the anchovies, dijon, egg yolks, salt and pepper, the first tablespoon of lemon juice and the vegetable oil. combine in food processor. while still on and combining ingredients, slowly add the olive oil a tiny bit at a time. do the same with the remaining lemon juice until all the ingredients combine to a thick, creamy consistency. pour into a bowl or a bottle and place in fridge.
  3. slice in half long ways (not completely, make it sort of like a hotdog bun) and toast the sandwich roll in the oven. I put it in my oven for 3 minutes on 200F. place on a large cutting board. spread your favorite/desired condiments on the bread. first layer is half the turkey. second layer is tomato, bell pepper, onion, pepperoncini. then layer the cheese on, the second half of the turkey, then the spinach/desired green leaf. close sandwich and slice in half or in smaller sandwiches for multiple people.
  4. place on a plate. in a large salad bowl, add the chopped romain and combine with the parmesane cheese and caesar dressing. croutons if you desire. plate a side of the salad with the sandwich. can also make this a "club" sandwich by adding bacon.
