Char Siu -- Literally the best Chinese BBQ ever.

Char Siu (Chinese Barbecued Pork)

  • 1 1/2 pounds pork lean shoulder

  • 2 Tbsp. honey

  • 2 Tbsp. Shaoxing cooking wine

  • 1 Tbsp. red fermented bean curd

  • 1 Tbsp. Hoisin sauce

  • 1/2 tsp. Chinese five spice powder

  • 1 Tbsp. Chinese dark soy sauce

  • 2 tsp. Oyster sauce

  • 2 cloves Garlic, grated

Combine all the ingredients except the pork into a marinade. Add the bulk of the marinade and insert into a plastic bag, reserving three or more tablespoons in a separate container.

Assemble the pork and dry, then insert into the bag with the marinade. Allow it to set up inside the fridge until ready (about two days).

Place the pork on the grill and turn three times, each side getting more of the marinade each time.

At this point the meat can be served immediately or can be held fr a future dish.
