Grandma's famous Carrot Rice. ( Middle Eastern Recipe.)

Hello, guys, this recipe is one of my favorites, hope you like it. * Skill Level: Intermediate * Ingredients: * 2lb. of Beef/ or 1 whole chicken. ( I would go for chicken.) * 2 Carrots (Shredded.) * 3 pieces of Cardamom. * 1 tsp Black Pepper. * 1 tsp Cumin. * 1-1/2 tsp Sea Salt. * 1 Cinnamon stick. * 2 Chopped Onions. * 3 cups Basmati Rice. * 1 Carton of Tomato Paste. ( About 140 grams or 5/8 cups.) * 1/3 cup Oil. * 6 cups of Water. * Preparation: * - Wash and clean chicken, and set aside for now. * - Add oil and onions to a big pot, allow onions to slightly brown. * - Add chicken and tomato paste w/ cardamom, salt, pepper, cumin, and cinnamon stick to the pot. * - Add the 6 cups of water to the pot. * - Leave until chicken is completely cooked. * - Wash rice and add to cooking pot w/ carrots. * - Drop the fire to low, and wait for rice to cook with supervision, ( Keep stirring so it does not stick to the sides of the pot.) * - Rest rice for about 15 minutes. * - Enjoy!
