Hi /r/recipes! I just found this subreddit today, and I hope I'm not breaking any rules with this post.
A relative of mine is in the hospital near my house (a long way from home for him) for an extended stay. His wife is with him, and spends most of her time in his room. He is paralyzed from the neck down and she is his main caretaker. The last time I visited them, they were lamenting the quality of the food at the hospital and I thought to myself 'hey, you live not five minutes away from here, you should bring them decent food every now and then!'
So, now, I'm trying to brainstorm meals, etc. that would be useful for this purpose. They have access to a microwave, so they'll be able to reheat the food if necessary. I have several oven-safe food storage containers that I can bake things like lasagna, etc. directly into, which is why I like the idea of several types of casseroles, since I can split a bigger recipe into several small portions and bake one, and freeze the others for easy baking at a later date :)
Some notes: my relatives are in their mid-sixties and while they are extremely polite they a little wary of food that is unusual to them, so while I adore cuisine from far away lands, it may be a little intimidating for these folks :)
