Pork Steak and Sausage in a Tomato Gravy is a delicious alteration of the Pork Fingers and Sausage recipe that my mom used to make.

Ingredients:
- 3 Tbsp cooking oil
- 2 medium onions chopped
- 3 stalks of celery chopped
- 2 tsp garlic minced
- 1 bell pepper chopped
- 1.5 to 2 lbs of pork (I used country style ribs cut up.)
- 1 lb of fresh sausage
- 4 ounces of tomato sauce
- 2 cups of chicken stock
Seasoning Mix
- 2 tsp cayenne pepper
- 1 tsp white pepper
- 1 tsp black pepper
- 1 Tbsp salt
- 1 tsp dried thyme
- 1/2 tsp rubbed sage
Directions:
- Heat a large cast iron pot over high heat
- Add oil to the pot, add pork and brown
- Add half of the vegetables and cook until soft (10-15 minutes)
- Add tomato sauce, chicken stock and seasoning.
- Cover and let cook on medium heat for 1 hour stirring occasionally.
Serve over Rice
