I have a ton of country sausage I need to use over the next few months and I need recipe ideas. I don't wanna just use it in casseroles that are really heavy and I can only have eggs for dinner so many times a week. I want something I can have for dinner but wouldn't mind for lunch. It is usually about 125 degrees where I work in the plant and turn wrenches on big equipment, so I don't want something heavy that will weight me down.
