I am looking to do a massive seafood hot pot this weekend for my wifes birthday. I have 2 lbs of snow crab leg clusters, 2 lbs of 16-20 shrimp, 1 lb of cod, 1 lb of scallops and a cowboy ribeye to grill. For the broth I am using beef tallow, szechuan peppercorns, dried red chilies, ginger, garlic, bone broth and bay leaves. For the vegetables I picked up napa cabbage, enoki mushrooms, green onions and carrots. What am I forgetting? I have done several large hot pots before, this is the first time doing such a big one with seafood.
