Tofu tomato and edamame chinese homestyle braised pot/stew - 20 min cook time, satisfying, super delicious and balanced ($1/0.80p per large serving)

This is vegan/veggie friendly as is but feel free to add whatever add ins you want - serve with rice, pastas, noodles or any other carb you like

➸ Ingredients for one*

≈130g Medium firm tofu

2 large tomatoes (150-200g together)

≈70g edamame (2 handfuls)

1 spring onion (scallion)

1 clove of garlic

A thin slice of ginger

A pinch of salt, sugar and soy sauce (to taste, but roughly 1tsp)
