Cilantro Chickpea Salad * Serves 4
Tangy cilantro chickpea salad
Ingredients
- 5 cups chickpeas or garbanzo beans, drained and rinsed
- 2 cups chopped cilantro
- 1/4 cup lime juice
- 1-2 cloves of garlic (depending on your liking)
- 2 tablespoons olive oil
- 3/4 teaspoons ground cumin
- Salt and Pepper to taste
- Sliced Avocado (optional)
Instructions
- Puree the cilantro, garlic, olive oil and cumin.
- Toss with drained chickpeas
- Season to taste with salt and pepper
- Top with avocado (optional)
