Requirements:
- one can of peeled/diced tomatoes
- any spices preferred (cilantro mandatory)
- two eggs
- pepper/salt
- butter
- garlic
- olive oil
- Optional splash of red wine or red wine vinegar
- 2 tablespoons of heavy cream
Recipe:
Start off by peeling your garlic and finely slicing it. brown your garlic in a small saucepan in some olive oil to preferred taste.
Add the tomatoes and let reduce, then add the wine or wine vinegar and most of the cilantro and let simmer.
In one bowl, add the egg whites of your two eggs, and place the egg yolks in a small bowl. Add the heavy cream to the egg yolks and beat with a fork. In the mixing bowl, whip the egg whites to stiff peaks, with sugar or salt if that is your personal preference. Then (if preferred) add salt/pepper to your egg yolks and carefully fold this mixture in your egg whites, keeping as much air in as possible.
In the meanwhile, heat a non-stick-pan on medium-high and melt your butter.
Then add the egg-mixture and even with a spatula. (looks weird now)
Then cook uncovered for One Minute, then cover with a lid and cook for 1,5 minutes. At this point you can add spices over the top.
Then carefully with a spatula fold the egg, and immediately serve. Add sauce over the side, keeping the rounded edge at the edge of the plate, the sauce will form an amazing pool in the middle of the plate. Scatter the remaining cilantro over the egg and enjoy!
Keep in mind that this recipe is loosely based on an anime recipe, and can definitely use some improvements!
