Flourless Orange Cake

This flourless orange cake provides a wonderful orange citrus taste in a lovely moist cake. Topped with a beautiful orange sauce, some of which soaks into the cake and the end result is a spectacular burst of flavour. This is also a gluten-free recipe as well, so many more people can enjoy this amazing cake. Served with whipped cream and you have a truly magnificent dessert that everyone will enjoy.

Ingredients:
• 2 Oranges
• 3 Eggs
• 1 cup Caster Sugar
• 300g Almond Meal
• 1 tsp Baking Powder
Orange Sauce
• 1 Orange
• 3/4 cup Caster Sugar

Instructions:
1. Pre-heat oven to 170°C (fan forced).
2. Grease 23cm Springform baking pan. Line base with baking paper.
3. Place 2 oranges in a saucepan and cover with water.
4. Bring to boil and cook for 15 minutes. Drain water from saucepan.
5. Cover oranges in saucepan once again with water and bring to boil and cook for 15 minutes. This reduces the bitterness of the orange peel. Remove from heat, drain and refresh orange with cool water.
6. Coarsely Chop oranges, remove any seeds and place into a food processor. Note: include orange peel.
7. Process orange to remove lumps and until smooth.
8. In a large bowl, using an electric beater, mix eggs and sugar until pale and fluffy.
9. Add orange mixture, almond meal and baking powder and fold through until just combined. Note: use a spoon for this step, don't use the electric beaters.
10. Pour mixture into the prepared baking pan and cook in oven for about 50 minutes or until skewer inserted into the centre comes out clean. Set aside to cool for 15 minutes in the pan before turning out onto a wire rack to cool.
Orange Sauce
1. Using a vegetable peeler, remove some of the top layer peel from the orange. Remove any pith. Cut into small strips
2. Juice orange and remove any seeds.
3. In a saucepan over low heat, add orange juice, orange rind and sugar and cook until sugar dissolves and sauce starts to thicken. About 2-3 minutes. Remove from heat.
4. Using a skewer, poke holes in the cake, to allow some sauce to seep through into the cake. Pour sauce over the top of the cake and spread evenly using a spoon.
5. Serve with dollop cream.
