Savory Gruyere Baobab Waffles with Rosemary Recipe

Ingredients:

1 ¾ cups flour

1/4 cup of powbab® organic baobab superfruit powder

1/2 tablespoon sugar

1 teaspoon baking powder (use aluminum free)

1 teaspoon baking soda

1 teaspoons kosher salt

½ teaspoon freshly ground black pepper

3 large eggs, separated

4 tablespoons unsalted butter, melted or coconut oil

1 cup milk (grass fed whole milk. If vegan, use nut milk)

¾ cup club soda

1 teaspoon minced fresh rosemary

9 tablespoons coarsely grated Gruyere cheese (about 2.5 ounces)

Directions:

1) Whisk flour, powbab baobab powder, sugar, baking powder, baking soda, salt, and black pepper together in a mixing bowl.

2) In a separate bowl, mix egg yolks, melted butter, milk, club soda, and rosemary.

3) Carefully whisk wet ingredients into dry ingredients.

4) Separately, beat egg whites with an electric mixer to soft peaks. Gently fold peaked egg whites into the batter.

5) Turn on waffle maker.

6) When waffle maker ready, pour 3/4 cup of the batter onto each grid of the waffle maker, right after, sprinkle about 1 generous tablespoon of the cheese over each waffle. Close and flip the waffle maker, then cook until waffles are golden and crisp, 6 to 7 minutes.

7) Repeat cooking with remaining batter.

8) These waffles are great on their own, so delicious! Enjoy!
