My work is having a Thanksgiving potluck on Monday, and when I went to sign up, I realised that a coworker of mine won't be able to eat most of the food others are bringing.
I'd like to make either a side or a dessert that accommodates her long list of allergies. It's gotta be free of gluten, dairy, nuts, soy, and pea protein. I was thinking of making snickerdoodles with the following ingredients:
- gluten free flour
- baking powder
- salt
- baking soda
- brown sugar
- vanilla extract
- rice milk
- olive oil / canola oil (instead of butter)
- cinnamon
I've never subbed butter for olive or canola oil before and I've never even tasted rice milk. Do you think this recipe will still taste okay? If not, I'd love suggestions for other recipes that will work better.
