Ful ma' ar-Riz (Fava Bean Rice)

Ingredients

  • 1 lb. lamb shoulder, cubed
  • 1/2 lb chicken meat (thighs/legs) pulled apart
  • 1 1/2 tablespoons vegetable oil
  • (optional) 1 tsp butter
  • 1 onion, chopped
  • 1 lb fresh fava beans (can also use canned)
  • 2 tsp cumin
  • 1 tablespoon za 'atar
  • 1 tsp cinnamon
  • 6 cloves of garlic, chopped
  • salt and pepper
  • 4 cups water or stock
  • 2 cups rice
  • water for soaking the beans if you don't use canned

Cooking

  1. in a pot or high sided pan, brown the chicken, set a side and brown the lamb and set aside. (optional, add 1 tsp butter to pan/pot) add in the onions and fry until slightly browned and colored. remove the chicken from the bone and pull apart. add in the garlic and cook until fragrant. return the chicken and lamb and add the fava beans.
  2. cook for a minute or two on medium heat, while mixing. add in the rice and the spices. continue to cook for another minute while stirring together. add in the water or stock and stir well for 1 minute, then let come to a boil. reduce heat and cover and simmer for 15 - 20 minutes or until water is completely gone and rice is soft and meat is cooked.

I like to serve this with baba ganoush, harissa, labneh and tabbouleh or fattoush.
