How do you marinate your olives?

I've been doing this thing where I buy cured olives and drop whatever into the jar and leave it for months. So far I've done:

kalamata olives with garlic, lemon, dried majoram, chilli and zaatar( the plant not the mix),

green olives stuffed with pimentos marinated with oranges, garlic, zaatar, coriander seeds and a little chilli,

green olives with habanero chilli and rosemary.

Now I have 3 kg of kalamata olives and I want to try something different but I don't know what. Nothing involving alcohol or heaps of work because I don't know how to do things like sterilise bottles. What have you guys done? Would fresh curry leaves, ginger root, turmeric root and cumin seeds work with kalamata olives? Or any olive?
