Ingredients

1c Gordal Olives – medium chopped

½c Extra Virgin Olive Oil

¼ c Goat cheese
-
1 ½ tbsp Capers, small
-
2 tbsp Oven roasted tomatoes – medium chopped

1 tsp Garlic – minced
-
1 ½ tbsp Lemon Balsamic Vinegar
-
1 ½ tbsp Blood Orange extra virgin olive oil*
-
1 tsp Flat parsley, chopped

Rustic crostini bread
Directions

Brush crostini bread slices with olive oil, sprinkle with dried herbs of choice & toast in 375 degree oven for 10 minutes or until edges are golden brown. Set aside. May be made ahead up to a day ahead.

Combine olives, tomatoes, capers & garlic in medium bowl.

Add Extra Virgin olive oil, stirring gently to incorporate.

Add the Lemon Balsamic and lightly stir again.

Spoon mixture on toasted crostini slices, covering half of bread for easier handling.

To plate, line up finished crostini’s on a long plate, top with the goat cheese and drizzle with blood orange olive oil. Finish with chopped flat parsley over the crostini’s and plate
