Tzatziki, Hummus and Tapenade. Exotic and healthy snacks

There are days where we don’t want or don’t have time to cook something elaborate but what if is tasty and even original, because not. As for those times I bring three super simple appetizer recipes (Tzatziki, Hummus and Tapenade) to you party very well in front of your guests. They can also be a good choice as healthy snacks if you take them with vegetable crudités.

Ingredients:

For Tzatziki

  • black olives
  • 2 tsp of capers
  • clove of garlic
  • some rosemary and thyme
  • juice of half a lemon
  • half a cup of olive oil

For Hummus

  • 2 Greek yogurt
  • cucumber
  • garlic clove
  • half a lemon
  • some chopped mint
  • a tsp of olive oil

For Tapenade

  • 7 oz of cooked chickpeas
  • a tsp of tahini
  • some coriander
  • a drizzle of olive oil
  • lemon juice
  • salt

Instructions:

Tapenade or olive paste

  1. For its preparation you will need a cup of black olives (also can be done with green, but I prefer the black for the sauce), 2 tsp of capers, clove of garlic, some rosemary and thyme, the juice of half a lemon and half a cup of olive oil. The original recipe also takes anchovies

  2. The preparation could not be more simple: put all the ingredients except the olive oil in the bowl of the mixer, and while they are stirred and itching to a not very fast speed, incorporate the oil. Once completed you can also season with black pepper.

Tzatziki or yogurt and cucumber sauce

  1. One of the most refreshing appetizer, especially in summer time. The ingredients for Tazitziki are 2 Greek yogurt, cucumber, garlic clove, half a lemon, some chopped mint and a tsp of olive oil.

  2. To make tzatziki you do not even need a beater: peel and grate the cucumber to make it a paste, salt it and let it drain. Meanwhile, have all the other ingredients and mix in a bowl, and finally incorporate the grated cucumber. Keep it in the fridge for a couple of hours, and is ready to consume. The result is a very creamy, perfect sauce to serve with crudités.

Hummus or chickpeas pure

  1. A recipe that should have on hand if you are vegetarian or vegan, as it is a very rich way to eat vegetables even in the hottest months. You will need 7 oz of cooked chickpeas, a tsp of tahini (a sesame seed paste), some coriander, a drizzle of olive oil, lemon juice and salt.

  2. Put everything in the blender cup.

  3. Beat. Presto!
