Apple Crumble Baked Oatmeal

Hi all! This is my recipe for my favorite baked oatmeal. It's refined sugar free and vegan if using a couple adjustments. The whole recipe and photos are on my website at: http://ift.tt/1S1AxEj

Ingredients:

2 cups of ripe apples, cut into bite sized pieces (about 2 medium sized apples)*

1 ⅔ cups of oatmeal

⅓ cup of walnuts, crumbled into small pieces

1 teaspoon of cinnamon

1 ¾ cup of milk (any unsweetened kind)

½ cup of honey (or maple syrup)

3 tablespoon of melted coconut oil (or butter)

1 teaspoon of vanilla

1 teaspoon of olive oil

*Pouring about a teaspoon of lemon juice over the apples and mixing to combine reduces the brown color from forming.

Method: Preheat oven to 350 degrees F / 175 degrees C. Grease an 8 x 8 inch glass dish with butter.

Place apple slices evenly on bottom of dish.

Combine the oatmeal, walnuts and cinnamon in a medium sized bowl. Mix well and spread over top of apples.

Mix wet ingredients in a separate bowl until well combined. Pour evenly over the dry ingredients. Don’t stir.

Bake until the top turns a golden color, about 30-45 minutes. Cool in the pan for 30 minutes before serving.
