White Pizza with Chicken and Blackberry Balsamic Glaze

Ingredients

For the Blackberry Balsamic Glaze:

  1. 1 6-oz container of blackberries, rinsed
  2. 2 Tbs water
  3. 1 Tbs pure maple syrup
  4. 3 Tbs balsamic vinegar
  5. 1 1/2 tsp dark brown sugar
  6. 1/4 tsp black pepper

For the Chicken:

  1. 1 lb organic chicken thighs
  2. 1 Tbs olive oil
  3. Ground black pepper
  4. Red pepper flakes

For the Pizza:

  1. 1 bag whole wheat pizza dough (or 1 batch of homemade dough)
  2. Cooked chicken, cubed or shredded
  3. 1 to 1.5 cups shredded mozzarella cheese (depending on your cheesiness preference)
  4. 1/2 cup feta cheese
  5. Dried basil, black pepper, and red pepper flakes
  6. Olive oil (to brush crust with)
  7. 1 batch of Blackberry Balsamic Glaze

Instructions

To Make Chicken:

  1. Preheat oven or grill to 375°F.
  2. Toss whole chicken thighs in olive oil and sprinkle both sides with black and red pepper seasonings. If baking, place thighs in baking dish and cook for 30-40 minutes, turning halfway through, or until cooked through (meat thermometer should read 165°). If grilling, cook for about 7-10 minutes/per side (actual cooking time will vary depending on your grill).
  3. Let chicken rest for 10 minutes and then cube or shred for pizza. Set aside.

To Make Glaze:

  1. When chicken has about 15 minutes to go, start making the glaze.
  2. Place all glaze ingredients in a medium saucepan over medium-high heat and bring to a boil.
  3. Once boiling, reduce to a simmer and mash blackberries (I used the back of a fork).
  4. Let simmer for 10 minutes or until thickened. Set aside.

To Make Pizza (Grilling):

  1. Heat grill to 550°F
  2. Roll out pizza dough and lightly brush one side with olive oil.
  3. Place dough with olive oil-side down on grill. Quickly brush the top of crust with olive oil and then close the lid. Let cook 2-3 minutes. The goal is for the bottom to have grill marks but not get burnt and overly crispy.
  4. Using tongs and a large spatula, flip pizza over and quickly top with chicken and cheeses. Sprinkle as much dried basil, red pepper flakes, and ground black pepper as you'd like.
  5. Close the lid and let cook about 5 minutes.
  6. Using tongs and large spatula, carefully transfer pizza to a large cookie sheet.
  7. Let cool for 3-5 minutes, then drizzle with blackberry glaze.
  8. Slice and enjoy!

To Make Pizza in the Oven:

  1. Preheat oven to 425°F.
  2. Roll out pizza dough and place on round pizza stone.
  3. Lightly brush pizza dough with olive oil then add chicken and cheeses.
  4. Top with dried basil, black pepper, and red pepper flakes.
  5. Bake in oven for 25-30 minutes.
  6. Remove from oven and let rest for 5 minutes.
  7. Drizzle glaze over pizza, slice, and enjoy!
