Ingredients:
1) 2 boneless and skinless free range/no hormone or steroid Chicken Breasts 1 organic Onion, halved and roughly sliced. 2) ½ cup organic Chicken Broth 3) 5 cloves organic Garlic, pressed 4) 3 tbsp Dijon Mustard 5) 2 tbsp fresh organic Parsley chopped 6) 1 tbsp fresh Tarragon, chopped 7) 1 tbsp additional organic Chicken Broth 8) 2 tsp organic Honey Sea Salt & Pepper to taste
Preparation:
Heat the additional tablespoon of chicken broth in a medium sized stainless steel skillet. Add the onions and sauté for over medium heat for about 2 minutes. While the onions are sautéing, cut the chicken breasts into 1 inch pieces. Add these to the onions and sauté for about 3 minutes. Next add the garlic and sauté for a further 1 minute, stirring frequently. Combine the honey, mustard and ½ cup pf chicken broth, and add this mixture to the sautéing chicken and mix thoroughly. Simmer uncovered on medium heat for 7-8 minutes, stirring occasionally. This will cook the chicken pieces evenly and will also help to reduce the sauce. When the chicken is cooked, place on a plate and garnish with roughly chopped tarragon and parsley, and add salt and pepper to taste. Preparation Time: 15 minutes Serves: makes 4 servings
