Malpua is a sweet pancake, usually made with flour, semolina & milk. But I added condensed milk and some of the rabri to make it delightful to taste.

Ingredients
- Sugar syrup: 1 1/2 cup sugar
- Water 1 cup
- Cardamom powder 1/4 tsp
- Batter: 1 cup Plain flour
- 1/4 cup semolina/ suji
- 1/4 tsp baking powder
- Dash of baking soda
- Clarified butter/ Oil to shallow fry
- Fennel seeds/ saunf/ mouri - 1tsp
- 1/2 tin/ 200 gm condensed milk
- Rabri: 1 litre Milk
- Sugar to taste
Instructions
- 1. Sugar Syrup: Put 1 1/2 cup of sugar and 1 cup of water in a saucepan. Also add 1/4 tsp cardamom powder.
- 2. Put the saucepan on gas and make thin syrup out of them.
- 3. Malpua batter: Put all dry ingredients first. plain flour/ maida, 2 tbsp semolina/suji( it makes the malpua crispy), 1/2 tsp baking powder and a dash of baking soda. For flavoring add fennel seeds/ saunf.
- 4. Give a mix.
- 5. Now put some of the rabri, condensed milk and finally milk.
- 6. Make pouring consistency batter. (See the video above)
- 7. let it sit for 30 minutes.. By the time it will thicken up little.
- 8. Heat clarified butter. Put 1 big spoon of batter in hot ghee.
- 9. Shallow fry them.
- 10. Soak them in sugar syrup.
- 11. Before serving, take out the malpua from sugar syrup in a plate.
- 12. Topped up with rabri and ready to serve.
